Quick porridge oats is one of the easiest meals you can start the day with. This recipe takes less than 10 minutes from prep to finish. While also packing the necessary fiber you need to start the day off right. Even though this recipe uses Zucchini, this method will work if you want to use something like tomatoes instead. This base recipe is very versatile and is the reason why I love it so much. With a garden full of vegetables, this recipe will also save you lots of money. That and not only greater than the sum of it's ingredients, it also uses only one pan. Making the clean up much easier.
Quick tips
- When using a watery ingredient like tomato, I recommend to sauté it longer until it caramelizes. Giving it a more deep and complex flavor.
- Finishing with butter or olive oil after plating will make the dish taste more rich, perfect for the cold winter months.
- You can also use veg stock or any other stock rather than water to further enhance the flavor, but I normally opt for water to make a lighter breakfast.
Method & Recipe
- Add diced zucchini to a pan that was pre-heated to medium low heat. Adding salt and pepper to taste.
- You can add the optional Cayenne pepper at this point, and continue to sauté until the zucchini is almost fork tender
- once fork tender, add water and bring it to a rolling boil.
- once the water has reached a rolling boil, add the rolled oats. Stirring frequently until porridge consistency has been reached
